Roasted Spinach, Onions, and Butternut Squash

Ingredients:

1/3 cup pecans, chopped

1/3 cup dried cranberries, sweetened

3 oz fresh spinach, stems removed and leaves torn in bite-sized pieces

2 Tbsp olive oil

1 cup red onion, chopped

1 butternut squash

Instructions:

Preheat the oven to 450 F after greasing a baking sheet lightly.

Slice the butternut squash into 1 inch pieces crosswise. Make sure to peel and clean each of them and discard stringy pulp, plus remove the seeds.

Then, toss the squash cubes together with olive oil and onion until well-coated in a bowl before transferring to a baking sheet.

Roast until squash is tender or for around 25 to 30 minutes.

Then, toss the squash cubes together with pecans, dried cranberries, and spinach in a bowl.

Serve warm and enjoy!
